Semi soft cows milk cheese from the Jura. It has a washed rind, and is characterised by the layer of ash running horizontally through the cheese. This was traditionally put in to separate curds made from the morning and afternoon milkings. It has a slightly yeasty aroma and a sweet and fruity taste.
